The Chardonnay was hand picked and whole bunch pressed on the 27th of March. The wine comprises of three parcels from differing blocks and aspects within the vineyard. Settled to tank overnight before being racked to oak for primary ferment. The oak regime is François Frères puncheons (35 - 40% new) and barriques.
